Yes, not only can you use profile, but you must! The flatness callout, even among several surfaces, only controls the flatness of each surface to itself. But they could still be offset or angled from one another. Profile of a surface does flatness AND the coplanarity. (I know this doesn't seem obvious, but that's the rule!) Also, above or below the profile callout, be sure to note the number of surfaces (e.g. 4 SURFACES)
