The difference is seen in the following:

angularity -
1)requires datum reference(s)
2)controls only orientation of axes, line
elements, planes*

profile of a surface -
1) may not require datum reference
2) can control co-planarity, location,
orientation (surfaces, not axes), form

So, there is overlap between the two controls, but neither is a superset to the other making eliminating either one difficult.

* Also controls form indirectly by limiting departure of surface - similar to flatness control
